Description
A terrine is a dish made by layering seasoned meats, vegetables or fish in a loaf-shaped mould and slow-cooking it – usually in a bain-marie. The name also refers to the enamelled cast-iron dish – which is traditionally used to make the food. The resulting food is pressed and cooled, served sliced cold or at room temperature, and can be a rustic alternative to the smoother pâté.
